2 boneless, skinless chicken breasts

1 tablespoon soy sauce

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon olive oil

Salt and pepper to taste

1 large pineapple, halved and cored

1 red bell pepper, diced

1 cup cooked quinoa

½ cup black beans, rinsed and drained

¼ cup red onion, finely chopped

¼ cup fresh cilantro, chopped

Lime wedges, for serving

Marinate the Chicken: In a bowl, combine the soy sauce, honey, minced garlic, grated ginger, olive oil, salt, and pepper. Add the chicken breasts and coat well. Let marinate for at least 30 minutes (or up to overnight in the fridge for extra flavor).

    Prepare the Pineapple: While the chicken marinates, cut the pineapple in half lengthwise and carefully scoop out the flesh, leaving about half an inch of fruit attached to the shell to create a bowl. Reserve the pineapple flesh for the filling.

      Grill the Chicken: Preheat your grill to medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing it into bite-sized pieces.

        Prepare the Filling: In a large bowl, combine the reserved pineapple flesh, diced red bell pepper, cooked quinoa, black beans, red onion, and chopped cilantro. Mix well and season with salt and pepper to taste.
