Grilled BBQ Chicken Pizza

1 pound pizza dough (store-bought or homemade)

1 cup cooked chicken, shredded (preferably grilled)

1 cup BBQ sauce (your favorite brand)

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup fresh cilantro, chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 tablespoon olive oil

Salt and pepper to taste

Optional: 1/2 cup sharp cheddar cheese, shredded

Preheat the Grill: Start by preheating your grill to medium-high heat (about 400°F or 200°C). If using a pizza stone, place it on the grill to heat up.

    Prepare Chicken: In a bowl, combine the shredded chicken with half of the BBQ sauce. Mix well until evenly coated.

      Shape the Dough: On a lightly floured surface, stretch or roll out the pizza dough into a 12-inch circle. If you prefer a thicker crust, leave it a little thicker around the edges.

        Oil the Dough: Brush one side of the dough lightly with olive oil to prevent sticking and enhance grilling.

          Place on Grill: Carefully place the oiled side of the pizza dough on the grill grate (or pizza stone). Close the lid and grill for about 3-4 minutes, or until the bottom is golden brown and has nice grill marks.

            Flip and Layer: Using tongs, carefully flip the dough over. Spread the remaining BBQ sauce over the grilled side, leaving a small border for the crust. Next, sprinkle the mozzarella cheese evenly over the sauce, followed by the BBQ chicken, red onion slices, and optional cheddar cheese.

              Grill the Pizza: Close the grill lid and cook for an additional 5-7 minutes, or until the cheese is melted and bubbly and the crust is cooked through.

                Garnish: Once cooked, remove the pizza from the grill and let it cool for a minute. Top with fresh cilantro, a sprinkle of garlic powder, onion powder, salt, and pepper to taste.
