Ingredients

2 cups cooked chicken breast, shredded

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1-2 green chilies, finely chopped (adjust based on spice preference)

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup fresh spinach leaves, chopped

½ cup corn (canned or frozen)

½ cup black beans, rinsed and drained

1 cup shredded cheese (cheddar or pepper jack)

4 large tortillas or wraps

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and chopped green chilies, cooking for an additional 2-3 minutes until fragrant.

Add Chicken and Spices: Add the shredded chicken to the skillet, followed by cumin, smoked paprika, salt, and pepper. Mix well to combine, allowing the chicken to absorb the flavors. Cook for another 3-4 minutes until heated through.

Incorporate Greens and Beans: Stir in the chopped spinach, corn, and black beans. Cook for an additional 2 minutes, just until the spinach wilts. Remove from heat and taste for seasoning, adjusting as necessary.

Prepare the Wraps: Lay out the tortillas/wraps on a clean surface. Spoon an equal portion of the chicken mixture onto the center of each tortilla. Sprinkle with shredded cheese.

Wrap It Up: Fold the sides of the tortilla over the filling, then roll it tightly from the bottom to the top to create a wrap. Ensure the filling is well-secured.

Toast (Optional): For added crunch and warmth, return the wraps to the skillet (the one used for the filling) or place in a panini press and toast until golden, about 2-3 minutes per side.

Serve: Cut the wraps in half diagonally and garnish with fresh cilantro. Serve with lime wedges on the side for an extra zing.
