Ingredients

2 cups cooked chicken, shredded

1/2 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup green chilies, canned and drained

1/4 cup fresh cilantro, chopped

1 teaspoon garlic powder

1 teaspoon lime juice

1/2 teaspoon cumin

Salt and pepper, to taste

4 large flour tortillas

1/4 cup salsa (for dipping)

Instructions

Prepare the Filling: In a mixing bowl, combine the shredded chicken, softened cream cheese, cheddar cheese, green chilies, cilantro, garlic powder, lime juice, cumin, salt, and pepper. Mix until all ingredients are well combined and the mixture is smooth.

Assemble the Pinwheels: Place one tortilla on a flat surface. Spread an even layer of the chicken mixture over the tortilla, leaving about half an inch border around the edges.

Roll it Up: Starting from one edge, carefully roll the tortilla tightly into a cylinder. Make sure to keep the filling contained as you roll. Repeat this process with the remaining tortillas and filling.

Slice the Pinwheels: Once all tortillas are rolled, use a sharp knife to slice each rolled tortilla into 1-inch thick pinwheels. Arrange them on a serving platter.

Serve with Salsa: Drizzle some salsa over the pinwheels or serve it on the side for dipping.

Optional Step: For a warm variation, you can lightly toast the assembled pinwheels in a dry skillet over medium heat for about 2-3 minutes per side until golden and crispy.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 12 pinwheels
