Green Chili Breakfast Grilled Cheese

4 slices of sourdough bread

4 oz pepper jack cheese, shredded

2 oz cream cheese, softened

1-2 fresh green chilies, diced (jalapeño or serrano for more heat)

2 large eggs

2 tbsp butter

1/4 tsp garlic powder

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Filling: In a bowl, combine the cream cheese, diced green chilies, garlic powder, salt, and pepper. Mix well until the ingredients are fully incorporated.

    Assemble the Sandwich: Spread the chili cream cheese mixture evenly on two slices of sourdough bread. Top each with a generous amount of shredded pepper jack cheese. Place the remaining slices of bread on top to form sandwiches.

      Cook the Eggs: In a small skillet, melt 1 tbsp of butter over medium heat. Crack the eggs into the skillet and fry until the whites are set, but the yolks are still runny (or cook to your preference). Season with salt and pepper. Remove from heat.

        Grill the Sandwiches: In another skillet, melt the remaining 1 tbsp of butter over medium heat. Once melted, place the assembled sandwiches in the skillet. Grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is gooey.
