Green Chili Black Bean Tacos

1 can (15 oz) black beans, rinsed and drained

1 cup green chili salsa (mild or hot, depending on preference)

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

8 small corn or flour tortillas

1 avocado, sliced

1 cup shredded lettuce

½ cup crumbled feta or cotija cheese (optional)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Prepare the Filling: In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add Black Beans and Spices: Add the rinsed black beans, green chili salsa, ground cumin, smoked paprika, salt, and black pepper to the saucepan. Stir to combine, and let the mixture simmer for about 5-7 minutes, allowing the flavors to meld. You can mash some of the beans with the back of a fork for added creaminess if desired.

      Warm the Tortillas: While the filling is simmering, warm the tortillas in a separate skillet over medium heat for about 30 seconds on each side, or until pliable. You can also wrap them in aluminum foil and place them in a preheated oven at 350°F (175°C) for about 10 minutes.

        Assemble the Tacos: To assemble the tacos, place a generous scoop of the black bean mixture in the center of each warm tortilla. Top with sliced avocado, shredded lettuce, and crumbled cheese if using.

          Garnish and Serve: Finish with a sprinkle of fresh cilantro. Serve the tacos with lime wedges on the side for an extra burst of flavor.
