12 oz pasta (fusilli or penne)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1 cup crumbled feta cheese

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

Salt and pepper, to taste

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Vegetables: While the pasta is cooking, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, and finely chop the red onion.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley.

        Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Adjust seasoning according to your taste.

          Dress the Salad: Pour the dressing over the pasta and vegetable mixture. Gently toss until everything is well-coated.

            Chill and Serve: Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld. Serve chilled or at room temperature.
