Greek Chicken with Lemon and Feta

4 boneless, skinless chicken breasts

1/4 cup olive oil

4 cloves garlic, minced

Zest and juice of 2 lemons

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1/2 cup crumbled feta cheese

1/4 cup kalamata olives, pitted and halved

1 cup cherry tomatoes, halved

Fresh parsley, chopped (for garnish)

Marinate the Chicken: In a large bowl, mix together the olive oil, minced garlic, lemon zest, lemon juice, oregano, thyme, paprika, salt, and pepper. Add the chicken breasts to the bowl, coating them well with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Preheat the Grill: Preheat your grill to medium-high heat. If you don’t have a grill, you can also use a grill pan or bake in the oven at 400°F (200°C).
