Greek Chicken Souvlaki Bowls

For the Chicken Marinade:

1 pound boneless, skinless chicken thighs, cut into 1-inch cubes

3 tablespoons olive oil

2 tablespoons fresh lemon juice

3 cloves garlic, minced

1 tablespoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

For the Bowls:

2 cups cooked quinoa or rice

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red onion, thinly sliced

1 cup feta cheese, crumbled

1 cup Kalamata olives, pitted and halved

Fresh parsley, chopped, for garnish

For the Tzatziki Sauce:

1 cup Greek yogurt

1 cucumber, finely grated and drained

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon fresh lemon juice

1 tablespoon fresh dill, chopped

Salt and pepper to taste

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper. Add the chicken cubes, mix until well coated, and let it marinate for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Tzatziki Sauce: In another bowl, mix together yogurt, grated cucumber, minced garlic, olive oil, lemon juice, dill, salt, and pepper. Set aside in the refrigerator to chill for at least 20 minutes to allow the flavors to meld.

      Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Thread the marinated chicken onto skewers (if using wooden skewers, soak them in water for 30 minutes beforehand). Grill the chicken for about 10-12 minutes, turning occasionally until cooked through and slightly charred.

        Assemble the Bowls: Start with a base of cooked quinoa or rice in each bowl. Top with grilled chicken, cherry tomatoes, cucumber, red onion, feta cheese, and Kalamata olives.
