1 lb (450g) boneless, skinless chicken thighs

4 cloves garlic, minced

2 tablespoons olive oil

2 tablespoons fresh lemon juice

1 teaspoon dried oregano

1 teaspoon ground cumin

1 teaspoon paprika

Salt and freshly cracked black pepper, to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

1 cup cucumber, finely grated and excess moisture squeezed out

2 cloves garlic, minced

1 tablespoon fresh dill, chopped

1 tablespoon olive oil

1 tablespoon white vinegar or lemon juice

Salt, to taste

For Assembling:

4 pita breads

1 cup cherry tomatoes, halved

1 small red onion, thinly sliced

Fresh arugula or shredded lettuce

Feta cheese, crumbled (optional)

Prepare the Marinade:

    - In a large bowl, combine minced garlic, olive oil, lemon juice, oregano, cumin, paprika, salt, and black pepper. Mix well.

      - Add the chicken thighs into the marinade, making sure they are fully coated. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

        Make the Tzatziki Sauce:

          - In a separate bowl, mix Greek yogurt, grated cucumber, minced garlic, dill, olive oil, and white vinegar or lemon juice. Season with salt to taste. Cover and chill in the refrigerator until ready to use.

            Cook the Chicken:

              - Preheat your grill or skillet over medium-high heat.
