1 large head of cauliflower

1/4 cup grated Parmesan cheese

1/4 cup breadcrumbs (preferably panko for extra crunch)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Cauliflower: Remove the leaves from the cauliflower and trim the stem. Place the head of cauliflower upside down on a cutting board. Using a sharp knife, cut the cauliflower into 1-inch thick “steaks.” Aim for 3-4 steaks from the center of the cauliflower head. Reserve any smaller florets for another recipe or snack!

      Make the Coating: In a bowl, mix together the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir until well combined.

        Coat the Steaks: Brush each cauliflower steak with olive oil on both sides. Then, generously sprinkle the Parmesan-breadcrumb mixture over both sides of each steak, pressing down lightly to adhere the coating.

          Bake the Steaks: Place the coated cauliflower steaks on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and crispy, flipping halfway through for even cooking.

            Garnish and Serve: Once baked, remove the cauliflower steaks from the oven. Transfer them to a serving platter, garnish with fresh parsley, and serve with lemon wedges on the side.
