For the Coconut Shrimp:

1 lb large shrimp, deveined and tails removed

1 cup all-purpose flour

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

2 large eggs

1 cup shredded coconut (sweetened or unsweetened, as preferred)

1 cup panko breadcrumbs

Vegetable oil for frying

For the Chili Honey Dip:

1/2 cup honey

1-2 teaspoons chili powder (adjust to taste)

1 tablespoon lime juice

1/4 teaspoon salt

Instructions
 

Prepare the Shrimp:

    - Rinse the shrimp under cold water and pat them dry with paper towels.

      - In a bowl, whisk together the flour, salt, black pepper, garlic powder, and paprika.

        Coat the Shrimp:

          - In another bowl, beat the eggs. Set aside.

            - In a third bowl, combine the shredded coconut and panko breadcrumbs.

              - Dredge each shrimp in the flour mixture, shaking off any excess. Dip them into the beaten eggs, then roll them in the coconut-panko mixture until fully coated. Place them on a baking sheet.

                Heat the Oil:

                  - In a large skillet or frying pan, pour enough vegetable oil (about 1/2 inch deep) to fry the shrimp. Heat over medium-high heat until the oil reaches about 350°F (175°C).

                    Fry the Shrimp:

                      - Carefully add the shrimp to the hot oil in batches, ensuring you don’t overcrowd the pan. Fry for 2-3 minutes on each side, or until golden brown and crispy.

                        - Use a slotted spoon to transfer the cooked shrimp to a paper towel-lined plate to drain excess oil.

                          Make the Chili Honey Dip:

                            - In a small bowl, mix the honey, chili powder, lime juice, and salt until well combined. Adjust the spice level by adding more chili powder if desired.

                              Serve:

                                - Arrange the golden coconut shrimp on a serving platter. Serve with the chili honey dip on the side for an extra kick of flavor.
