1 teaspoon dried oregano

1 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper, to taste

1/4 cup fresh parsley, chopped (for garnish)

For the Chicken Bites:

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 tablespoon honey or maple syrup

Juice of 1 lime

Salt, to taste

Prep the Chicken Bites:

    - In a bowl, combine the chicken pieces with Cajun seasoning, olive oil, honey (or maple syrup), lime juice, and salt. Mix until the chicken is well coated. Set aside to marinate for at least 15 minutes.

      Cook Potatoes:

        - In a large skillet or cast-iron pan, heat 2 tablespoons of olive oil over medium heat.

          - Add the diced Yukon Gold potatoes. Season with salt and black pepper. Cook for about 15-20 minutes, stirring occasionally until they are golden and crispy. Once cooked, remove the potatoes from the skillet and set aside.

            Sauté Vegetables:

              - In the same skillet, add a little more olive oil if needed.

                - Sauté the onions and bell peppers until they become soft and translucent, about 5-7 minutes.

                  - Stir in the minced garlic, smoked paprika, dried oregano, and cayenne pepper. Cook for another 1-2 minutes until fragrant.

                        - Keep the heat on low while you cook the chicken.

                          Cook Chicken Bites:

                            - In a separate pan, heat 1 tablespoon of olive oil over medium-high heat.

                              - Add the marinated chicken bites in a single layer. Cook for about 5-7 minutes, turning occasionally, until golden brown and cooked through.

                                Final Assembly:

                                  - Once the chicken bites are cooked, add them to the potato hash mixture. Stir everything together gently and let it cook for an additional 2-3 minutes to allow flavors to meld together.
