Ingredients

4 boneless chicken thighs (skinless for a lighter option)

1/2 cup fresh orange juice

Zest of 1 orange

1-inch piece of fresh ginger, grated

3 tablespoons soy sauce (low sodium preferred)

2 tablespoons honey or maple syrup

2 cloves garlic, minced

1 tablespoon rice vinegar (or apple cider vinegar)

1 tablespoon sesame oil

Salt and pepper, to taste

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Cooked jasmine rice or quinoa (for serving)

Instructions

Marinate the Chicken: In a medium bowl, combine the fresh orange juice, orange zest, grated ginger, soy sauce, honey (or maple syrup), minced garlic, rice vinegar, sesame oil, salt, and pepper. Whisk until well mixed. Add the chicken thighs to the bowl, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

Prepare the Grill or Skillet: If you're grilling, preheat the grill to medium heat. For stovetop cooking, heat a large skillet or frying pan over medium-high heat, adding a touch of oil to prevent sticking.

Cook the Chicken: Remove the chicken from the marinade, letting any excess drip off. If grilling, place the chicken thighs on the grill and cook for about 6-7 minutes on each side until they reach an internal temperature of 165°F (75°C) and have nice grill marks. For stovetop, cook the chicken thighs in the skillet for about 6-7 minutes per side, basting occasionally with the marinade until caramelized and cooked through.

Prepare the Glaze: While the chicken is cooking, transfer the remaining marinade to a small saucepan and bring to a boil. Reduce heat to a simmer and cook for about 5-7 minutes until thickened to a glaze consistency. Stir frequently to prevent burning.

Coat the Chicken: Once the chicken is cooked, brush it generously with the ginger orange glaze, making sure each piece is well coated and sticky.

Serve: Remove the chicken from heat and let it rest for a few minutes. Slice and serve over a bed of jasmine rice or quinoa. Drizzle any remaining glaze over the top, then garnish with sliced green onions and a sprinkle of sesame seeds.

Enjoy your dish! Dig in and enjoy the delightful combination of ginger and orange flavors!
