8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

2 cups fresh spinach, chopped

1/2 cup cherry tomatoes, halved

1/4 cup white wine (optional)

1/4 cup chicken or vegetable broth

1/4 cup grated Parmesan cheese

3 tablespoons olive oil

1 teaspoon red pepper flakes (adjust for spice)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water; drain and set the pasta aside.

    Sauté Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp, season with salt, pepper, and red pepper flakes. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

        Add Veggies: Stir in the chopped spinach and halved cherry tomatoes. Cook until the spinach wilts and the tomatoes start to soften, about 2-3 minutes.

          Create the Sauce: Pour in the white wine and broth (if using). Let it simmer for 2-3 minutes to let the alcohol evaporate and the flavors combine.

            Combine: Return the cooked shrimp to the skillet. Add the drained pasta to the skillet and toss everything together gently. If the pasta seems dry, add some of the reserved pasta water, a little at a time, to achieve desired consistency.

              Finish with Cheese: Remove the skillet from heat and stir in the grated Parmesan cheese, mixing until melted and the sauce coats the pasta evenly.
