1 pound Brussels sprouts, trimmed and halved

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika (smoked is best for added flavor)

1/2 cup grated Parmesan cheese

2 tablespoons balsamic vinegar (optional, for drizzling)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C), ensuring it's fully heated before roasting the Brussels sprouts.

    Prepare the Brussels sprouts: In a large bowl, combine the trimmed and halved Brussels sprouts with the olive oil, minced garlic, salt, black pepper, and paprika. Toss well until the sprouts are evenly coated.

      Spread on a baking sheet: Line a baking sheet with parchment paper for easy cleanup. Spread the prepared Brussels sprouts in a single layer on the baking sheet, cut side down for maximum crispiness.

        Roast in the oven: Place the baking sheet in the preheated oven and roast the Brussels sprouts for about 20-25 minutes. Halfway through, give them a shake or stir to ensure even cooking.

          Add the Parmesan cheese: After 20-25 minutes, remove the baking sheet from the oven. Sprinkle the grated Parmesan cheese over the Brussels sprouts and return them to the oven. Roast for an additional 5-7 minutes, or until the cheese is melted and golden.

            Finish & serve: Once roasted, remove the Brussels sprouts from the oven. If desired, drizzle with balsamic vinegar for an added tang, and garnish with freshly chopped parsley. Serve hot as a delicious side dish!
