1 lb ground chicken

1/2 cup breadcrumbs (preferably Italian seasoned)

1/4 cup grated Parmesan cheese

3 cloves garlic, minced

1 small onion, finely chopped

1/4 cup fresh parsley, chopped

1 large egg

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

1/4 tsp red pepper flakes (optional for a kick)

1/2 cup marinara sauce (for topping)

Olive oil (for drizzling)

Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

    Prepare the Mixture: In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, chopped onion, parsley, egg, oregano, salt, pepper, and red pepper flakes. Mix until all ingredients are well incorporated; be careful not to overmix to keep the meatloaf tender.

      Shape the Loaves: Divide the mixture into 4 equal portions and shape them into mini loaves (or you can form one large loaf if preferred) and place them on the prepared baking sheet or in the loaf pan.

        Prepare for Baking: Drizzle a little olive oil over the top of each meatloaf for added moisture and flavor.

          Bake the Meatloaves: Place the baking sheet or loaf pan in the preheated oven and bake for about 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the tops are slightly golden.

            Add Marinara Sauce: In the last 5 minutes of baking, remove the meatloaves from the oven, spoon marinara sauce over the top of each, and return to the oven to heat through and meld flavors.

              Serve: Once cooked, remove from the oven and let rest for about 5 minutes. Serve warm, garnished with extra parsley if desired. Pair with a side salad or roasted vegetables for a complete meal!
