2 large russet potatoes

1 tablespoon olive oil

3 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 teaspoon onion powder

1 teaspoon smoked paprika

2 tablespoons fresh parsley, chopped (for garnish)

Prep the Potatoes: Start by peeling and cutting the russet potatoes into bite-sized cubes or wedges. Rinse them under cold water to remove excess starch, then pat them dry with a paper towel.

    Soak the Potatoes: For extra crispiness, soak the potato pieces in cold water for at least 30 minutes. After soaking, drain and dry them thoroughly.

      Seasoning Mix: In a large bowl, combine the olive oil, minced garlic, Parmesan cheese, onion powder, smoked paprika, salt, and black pepper, mixing well.

        Coat the Potatoes: Add the drained and dried potato pieces to the bowl and toss until all pieces are evenly coated with the seasoning mixture.
