Garlic Herb Roasted Potato Skins

4 large russet potatoes

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried rosemary

1 teaspoon dried thyme

1 teaspoon paprika

1 teaspoon sea salt

1/2 teaspoon black pepper

1/4 cup grated Parmesan cheese (optional)

Fresh parsley, chopped for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly. Pat them dry with a towel, then pierce each potato several times with a fork to allow steam to escape during cooking.

      Bake Potatoes: Place the potatoes directly on the oven rack or on a baking sheet. Bake for about 45-60 minutes, or until they are tender when pierced with a fork.

        Cool & Scoop: Once the potatoes are cooked, remove them from the oven and let them cool for about 10-15 minutes. When they’re cool enough to handle, cut them in half lengthwise. Gently scoop out most of the flesh, leaving about 1/4 inch of potato against the skin.

          Prepare Seasoning Mix: In a small bowl, combine olive oil, minced garlic, dried rosemary, dried thyme, paprika, sea salt, and black pepper. Mix well to create a flavorful herb oil.

            Brush the Potato Skins: Brush the insides of the empty potato skins with the herb oil mixture, ensuring they are well-coated.

              Roast the Potato Skins: Place the brushed potato skins on a baking sheet, cut side up. Roast in the preheated oven for 15-20 minutes, until the edges are crisp and golden.

                Add Cheese (Optional): If you want a cheesy flavor, sprinkle the grated Parmesan over the potato skins during the last 5 minutes of roasting.

                  Garnish & Serve: Remove the roasted potato skins from the oven. Garnish with freshly chopped parsley if desired. Serve warm with your favorite dipping sauce or enjoy them as they are!
