2 cups all-purpose flour

1 teaspoon instant yeast

1 teaspoon salt

1 tablespoon olive oil

3/4 cup warm water (about 110°F/43°C)

3 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped (or 1 tablespoon dried)

2 tablespoons fresh thyme, finely chopped (or 1 tablespoon dried)

1/4 teaspoon black pepper

2 tablespoons olive oil (for brushing)

Sea salt (for sprinkling on top)

Prepare the Dough: In a large mixing bowl, whisk together the flour, instant yeast, and salt. Make a well in the center and add the olive oil and warm water. Stir until a shaggy dough forms.

    Knead the Dough: Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. Form the dough into a ball.

      First Rise: Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm spot for about 1 hour or until doubled in size.

        Prepare the Garlic Herb Mixture: In a small bowl, mix together the minced garlic, rosemary, thyme, black pepper, and 2 tablespoons of olive oil to create a flavorful herb paste.

          Shape the Flatbreads: Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into an oval or circle about 1/4 inch thick.

            Preheat the Grill: Preheat your grill (or grill pan) to medium-high heat and lightly oil the grates.

              Add Seasoning: Brush each flatbread with the garlic herb mixture evenly on one side.

                Grill the Flatbreads: Place the flatbreads on the preheated grill, herb-side down. Grill for about 2-3 minutes, until you see grill marks and the edges begin to puff.

                  Flip and Finish Grilling: Brush the other side with the herb mixture, then flip the flatbreads and grill for another 2-3 minutes until cooked through and lightly charred.
