1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (any color), diced

½ red onion, finely chopped

¼ cup fresh parsley, chopped

¼ cup fresh basil, chopped

3 cloves garlic, minced

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Optional: feta cheese or avocado for topping

Instructions

Prep the Vegetables: In a large mixing bowl, add the drained and rinsed chickpeas. Then, add the halved cherry tomatoes, diced cucumber, diced bell pepper, and chopped red onion.

Add the Herbs: Gently fold in the chopped parsley and basil, ensuring they are evenly distributed among the vegetables.

Make the Dressing: In a small bowl, whisk together the minced garlic, olive oil, red wine vinegar, dried oregano, salt, and pepper. Taste and adjust seasoning if necessary.

Combine and Toss: Pour the garlic herb dressing over the chickpea and vegetable mixture. Using a spatula, carefully toss everything together until the salad is well coated with the dressing.

Chill and Serve: For the best flavor, let the salad sit in the fridge for at least 30 minutes to allow the flavors to meld together. If desired, sprinkle feta cheese or diced avocado on top before serving.

Enjoy: Serve chilled or at room temperature as a refreshing appetizer or a hearty side dish.
