Ingredients

12 ounces rigatoni pasta

1 pound sirloin steak, sliced into thin strips

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 teaspoon dried oregano

Salt and black pepper to taste

1 cup heavy cream

1 cup grated Parmesan cheese, plus extra for serving

1/2 cup fresh parsley, chopped (for garnish)

Zest of 1 lemon (optional)

Olive oil for cooking

Instructions

Cook the Rigatoni: In a large pot of salted boiling water, cook the rigatoni according to package instructions until al dente. Drain and reserve 1 cup of pasta water. Set the rigatoni aside.

Sear the Steak: In a large skillet over medium-high heat, add a drizzle of olive oil. Season the sliced steak with salt and black pepper. Once the oil is hot, add the steak in a single layer. Sear for 2-3 minutes until golden brown. Flip and cook for another 2 minutes until desired doneness. Remove from the skillet and set aside.

Make the Garlic Butter Sauce: In the same skillet, lower the heat to medium and add the butter. Once melted, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

Create the Cream Sauce: Pour in the heavy cream and stir well. Bring it to a gentle simmer. Mix in the grated Parmesan cheese and dried oregano. Stir continuously until the cheese melts and the sauce thickens, about 3-4 minutes. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

Combine Pasta and Steak: Return the cooked rigatoni and seared steak to the skillet. Toss everything together, ensuring the pasta is well coated with the creamy garlic butter sauce. Adjust the seasoning with more salt and pepper if needed.

Serve: Plate the Garlic Butter Steak Parmesan Rigatoni. Top with fresh parsley, a sprinkle of lemon zest for brightness, and additional Parmesan cheese if desired. Serve immediately and enjoy!
