Ingredients

1 pound sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried)

Salt and pepper, to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Steak: Season the steak cubes with salt and pepper generously. Let them rest at room temperature for about 15 minutes to ensure even cooking.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat. Make sure the oil is hot enough so that it shimmers.

Sear the Steak: Add the steak bites to the skillet in a single layer, making sure not to overcrowd the pan. Sear the steak for 2-3 minutes on each side until they develop a nice crust and are browned. You may need to work in batches if your pan can’t accommodate all the steak bites at once.

Add Garlic and Herbs: Once the steak bites are nearly done (medium-rare to medium, about 4-6 minutes total), push them to one side of the skillet. Add the butter, minced garlic, rosemary, and thyme to the other side.

Baste the Steak: Allow the butter to melt and mix with garlic and herbs. Then, take a spoon and baste the steak bites with the garlic butter mixture. Cook for another minute to ensure the bites are well-coated and flavorful.

Remove and Serve: Once cooked to your desired doneness, remove the skillet from the heat. Transfer the steak bites to a serving plate, drizzle any remaining garlic butter from the pan over the top, and garnish with fresh parsley.

Enjoy: Serve these flavorful garlic butter steak bites as an appetizer, or pair them with your favorite sides for a complete meal!
