Ingredients

For the Steak:

2 ribeye steaks (1 inch thick)

2 tablespoons olive oil

4 cloves garlic, minced

4 tablespoons unsalted butter

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

Salt and pepper to taste

For the Potatoes:

1 pound baby potatoes, halved or quartered

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Potatoes: In a large bowl, toss the halved baby potatoes with 3 tablespoons of olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated. Spread the potatoes out in a single layer on a baking sheet.

Roast the Potatoes: Roast the potatoes in the preheated oven for about 25-30 minutes, or until they are golden brown and tender when pierced with a fork. Stir halfway through for even cooking.

Prepare the Steak: While the potatoes are roasting, season the ribeye steaks generously with salt and pepper on both sides.

Sear the Steak: In a large skillet over medium-high heat, heat 2 tablespoons of olive oil until hot. Add the steaks to the skillet and sear for about 4-5 minutes on each side for medium-rare, depending on your desired doneness.

Add Garlic Butter: Once the steaks are nearly done, add the minced garlic to the skillet, followed by the butter, rosemary, and thyme. Use a spoon to baste the steaks with the melted garlic butter for about 1-2 minutes. This will enhance the flavor and create a beautiful crust.

Rest the Steaks: Remove the steaks from the skillet and transfer them to a plate. Let them rest for about 5 minutes to allow the juices to redistribute.

Serve: Plate the garlic butter steaks alongside the roasted baby potatoes. Drizzle any leftover garlic butter from the skillet over the steaks for extra flavor. Garnish with chopped fresh parsley.

Enjoy! Dig into the deliciousness and savor each bite of your garlic butter steak and potatoes!
