Garlic Butter Shrimp & Corn Skillet

Ingredients
  

1 lb large shrimp, peeled and deveined

2 cups fresh corn kernels (or 1 can of corn, drained)

4 cloves garlic, minced

1/4 cup unsalted butter

1 tablespoon olive oil

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Juice of 1 lime

Optional: 1/2 cup cherry tomatoes, halved

Instructions
 

Prep the Shrimp: Rinse the shrimp under cold water, then pat dry with paper towels. Season lightly with salt and pepper.

    Heat the Skillet: In a large skillet, heat the olive oil and 2 tablespoons of the butter over medium-high heat until melted and sizzling.

      Cook the Shrimp: Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side until they start to turn pink, then flip and cook for an additional 1-2 minutes until fully cooked. Remove shrimp from the skillet and set aside.

        Sauté the Garlic: In the same skillet, add the remaining butter and minced garlic. Sauté for about 1 minute until fragrant, making sure the garlic doesn’t burn.

          Add Corn: Stir in the corn kernels and red pepper flakes. Cook for about 5 minutes, or until the corn is tender and slightly caramelized.

            Combine: Return the shrimp to the skillet and mix gently to combine. Pour in the lime juice and season with more salt and pepper if desired. If using cherry tomatoes, add them now and stir to warm through.

              Garnish: Remove from heat and sprinkle with freshly chopped parsley.

                Serve: Serve immediately, warm from the skillet, with a side of crusty bread or over rice for a complete meal.
