500g fresh button or cremini mushrooms, cleaned and sliced

4 tablespoons unsalted butter

3 cloves garlic, minced

1 tablespoon fresh parsley, finely chopped

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

4 slices of rustic bread (like sourdough or ciabatta)

¼ cup grated Parmesan cheese (optional)

Zest of 1 lemon (optional for a fresh kick)

Prepare the Mushrooms: In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the sliced mushrooms in a single layer. Allow them to brown for about 4-5 minutes without stirring, then stir them gently and cook for an additional 3-4 minutes until golden and tender.

    Add Garlic and Herbs: Reduce the heat to medium. Push the mushrooms to one side of the skillet and add the remaining 2 tablespoons of butter to the empty space. Once melted, add minced garlic to the butter. Stir for about 30 seconds until fragrant, then mix everything together.

      Season: Add fresh parsley, thyme, salt, and pepper to the mushroom mixture. If using, sprinkle in the lemon zest for a zesty flavor. Cook for an additional minute, stirring everything together.

        Toast the Bread: While the mushrooms are cooking, toast the slices of rustic bread until golden brown and crispy.

          Assemble Toasts: Once the bread is done, place each slice on a serving platter. Pile the garlic butter mushroom mixture generously on top of each slice.

            Finish with Parmesan (optional): If desired, sprinkle grated Parmesan cheese over the warm mushroom topping for an extra layer of flavor.

              Serve: Enjoy immediately while warm, garnished with extra parsley if desired.
