When it comes to taco fillings, ground beef is a classic choice. For this recipe, it's recommended to use 80/20 ground beef, which means it consists of 80% lean meat and 20% fat. This specific fat content strikes a perfect balance between flavor and juiciness, enhancing the overall taste and texture of the tacos. The fat plays a crucial role in keeping the beef moist during cooking, preventing it from becoming dry or tough.

Ingredients

1 lb ground beef (preferably 80/20 for flavor)

4 cloves garlic, minced

2 tbsp unsalted butter

1/4 cup honey

1/4 cup BBQ sauce (your favorite brand)

1 tsp smoked paprika

1 tsp cumin

1/2 tsp salt

1/2 tsp black pepper

1 tbsp olive oil

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheddar cheese

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Cook the Beef: In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 6-8 minutes. Drain excess fat if necessary.

Prepare the Garlic Butter: In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned. Remove from heat.

Combine Flavors: In a mixing bowl, combine the cooked beef with honey, BBQ sauce, smoked paprika, cumin, salt, and black pepper. Pour the garlic butter mixture over the beef and stir well to ensure everything is evenly coated. Cook for an additional 3-4 minutes in the skillet on low heat to allow the flavors to meld.

Warm the Tortillas: While the beef mixture is simmering, heat the tortillas. You can do this in a dry skillet over medium heat for about 30 seconds on each side or wrap them in foil and heat them in the oven at 350°F for about 10 minutes.

Assemble the Tacos: Place a generous scoop of the garlic butter honey BBQ beef mixture into each tortilla. Top with shredded lettuce, diced tomatoes, and shredded cheddar cheese.

Garnish and Serve: Sprinkle fresh cilantro over the top and serve each taco with lime wedges on the side for squeezing over just before eating.
