Garlic Butter Chicken with Zucchini and Corn

Ingredients
  

4 boneless, skinless chicken thighs

3 tablespoons unsalted butter

4 cloves garlic, minced

2 medium zucchinis, diced

1 cup sweet corn (fresh, frozen, or canned)

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Juice of 1 lemon

Instructions
 

Prep the Chicken: Season the chicken thighs with salt, pepper, smoked paprika, and Italian seasoning on both sides.

    Sear the Chicken: In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the chicken thighs and cook for about 6-7 minutes on each side or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Garlic and Veggies: In the same skillet, add the remaining tablespoon of butter. Once melted, add the minced garlic and sauté for 30 seconds until fragrant.

        Add Zucchini and Corn: Stir in the diced zucchini and corn. Cook for about 5-7 minutes, stirring occasionally, until the zucchini is tender.

          Combine – Bring It Together: Return the chicken to the skillet, and squeeze the lemon juice over everything. Toss gently to combine and heat through for an additional 2-3 minutes.

            Serve: Garnish with freshly chopped parsley and serve hot! It pairs wonderfully with rice, quinoa, or a fresh green salad.
