Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 cup mixed fresh fruits (strawberries, blueberries, and diced kiwi)

1/2 cup cream cheese, softened

1/4 cup honey or agave syrup

1 teaspoon vanilla extract

1 cup granola (your choice)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Chicken: In a large skillet, heat olive oil over medium-high heat. Season the chicken pieces with garlic powder, onion powder, paprika, salt, and pepper. Add the seasoned chicken to the skillet and cook until golden brown and cooked through, about 7-10 minutes.

Make the Cream Cheese Mixture: While the chicken is cooking, in a medium bowl, combine the softened cream cheese, honey (or agave syrup), and vanilla extract. Mix until smooth and creamy.

Combine with Fruits: Once the chicken is cooked, reduce the heat to low. Add the mixed fresh fruits into the skillet with the chicken. Gently fold in the cream cheese mixture until combined. Warm everything together for an additional 2-3 minutes, allowing the flavors to meld.

Add the Crunch: Sprinkle the granola over the top of the chicken and fruit mixture. Allow it to crisp up for another minute, then remove the skillet from heat.

Serve and Garnish: Divide the Fruity Fiesta Chicken Skillet among plates or serve family-style. Garnish with fresh mint leaves, if using, and enjoy warm!
