Ingredients

2 cups Greek yogurt (plain or vanilla)

1 ½ cups fresh strawberries, hulled and diced

½ cup granola (your favorite mix)

2 tablespoons honey or maple syrup (adjust to taste)

½ teaspoon vanilla extract

Pinch of salt

Optional: ¼ cup mini chocolate chips or nuts for extra crunch

Instructions

Prepare the Strawberries: In a mixing bowl, combine the diced strawberries with honey or maple syrup. Gently mash them with a fork, leaving some chunks for texture. Set aside.

Mix the Yogurt: In a separate bowl, mix the Greek yogurt, vanilla extract, and a pinch of salt until smooth and creamy.

Combine Mixtures: Fold in the mashed strawberries into the yogurt mixture until well incorporated.

Add Granola: Gently stir in the granola and any optional ingredients like mini chocolate chips or nuts.

Form Discs: Line a baking sheet with parchment paper. Using a large spoon or an ice cream scooper, mound the mixture into round discs, flattening them slightly with the back of the spoon. Each disc should be about 2-3 inches in diameter.

Freeze: Place the baking sheet in the freezer for at least 4 hours, or until the discs are completely frozen.

Serve: Once frozen, carefully peel the discs off the parchment paper and serve immediately. Store any leftovers in an airtight container in the freezer.
