Ingredients
  

1 cup pumpkin puree

1 cup plain Greek yogurt

1/2 cup maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1 1/2 cups graham cracker crumbs

1/4 cup unsalted butter, melted

Whipped cream, for topping

Optional: pumpkin spice for garnish

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are well-coated.

    Press the Crust: Line a muffin tin with paper liners. Evenly divide the graham cracker mixture among the liners, pressing down firmly with the back of a spoon to form a crust at the bottom of each cup.

      Make the Pumpkin Filling: In a separate bowl, whisk together the pumpkin puree, Greek yogurt, maple syrup, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth and creamy.

        Fill the Cups: Spoon the pumpkin yogurt mixture over the crusts in the muffin tin, filling each cup to the top.

          Freeze: Place the muffin tin in the freezer for at least 4–6 hours, or until fully set.

            Serve: Once frozen, remove the cups from the muffin tin. Top each cup with a dollop of whipped cream and a sprinkle of pumpkin spice, if desired.
