2 cups Greek yogurt (plain or vanilla flavored)

1 cup pistachios, shelled and unsalted, plus extra for topping

1 cup Medjool dates, pitted and roughly chopped

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

Pinch of sea salt

Optional: 1/2 cup dark chocolate chips for drizzling

Instructions
 

Prep the Pistachios: In a food processor, pulse the pistachios until coarsely chopped. Reserve 2 tablespoons for topping.

    Blend the Base: In the same food processor (no need to clean out), add the Greek yogurt, chopped dates, honey or maple syrup, vanilla extract, and a pinch of sea salt. Blend until smooth and creamy.

      Incorporate the Nuts: Gently fold in the chopped pistachios into the yogurt mixture with a spatula, ensuring they are evenly distributed.

        Fill the Molds: Pour the yogurt mixture into popsicle molds, leaving a little space at the top for expansion. Insert sticks.

          Add Toppings: If desired, sprinkle the reserved chopped pistachios on top of the mixture before placing it in the freezer for added crunch.

            Freeze: Place the molds in the freezer and freeze for at least 4-6 hours or until solid.

              Optional Chocolate Drizzle: If you want to add a chocolate drizzle, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Once the pops are frozen, remove them from the molds, drizzle with melted chocolate, and return them to the freezer for an additional 30 minutes to set.
