Frozen Yogurt Pistachio Date Coins

1 cup unsalted pistachios, shelled and roughly chopped

1 cup Medjool dates, pitted and chopped

2 cups plain yogurt (Greek or regular)

2 tablespoons honey or maple syrup (optional, to taste)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 cup shredded coconut (unsweetened, optional)

1/4 cup dark chocolate chips (optional, for drizzling)

Instructions
 

Prepare the Yogurt Base: In a mixing bowl, combine the yogurt, honey or maple syrup (if using), vanilla extract, and sea salt. Stir until smooth and uniform. This will be the creamy base for your coins.

    Mix in Dates and Pistachios: Add the chopped Medjool dates and roughly chopped pistachios to the yogurt mixture. Gently fold until evenly distributed, ensuring each bite has a delightful crunch and sweet date flavor.

      Shape and Freeze: Line a baking sheet with parchment paper. Using a tablespoon or a small cookie scoop, drop dollops of the yogurt mixture onto the prepared baking sheet, flattening each scoop slightly to create coin shapes. Repeat until all the mixture is used.

        Add Coconut (Optional): If you’re using shredded coconut, sprinkle some over each yogurt coin before freezing for added texture and flavor.

          Freeze: Place the baking sheet in the freezer for at least 2-3 hours or until the yogurt coins are firm.

            Drizzle with Chocolate (Optional): If desired, melt the dark chocolate chips in a microwave-safe bowl until smooth. Once the yogurt coins are frozen, remove them from the freezer and drizzle the melted chocolate on top of each coin using a fork or a piping bag. Return to the freezer for another 30 minutes to allow the chocolate to harden.
