Ingredients
  

2 cups fresh pineapple chunks (you can also use frozen)

1 cup Greek yogurt (plain or vanilla)

1/2 cup coconut milk (canned for creaminess)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 tablespoon fresh lime juice (for an added zing)

Pinch of salt

Shredded coconut (for garnish, optional)

Pineapple slices or wedges (for serving, optional)

Instructions
 

Prepare the Pineapple:

    - If using fresh pineapple, peel, core, and cut into chunks. If using frozen, allow it to slightly thaw for easier blending.

      Blend the Mixture:

        - In a blender or food processor, combine the pineapple chunks, Greek yogurt, coconut milk, honey or maple syrup, lime juice, and a pinch of salt. Blend on high until smooth and creamy. You should achieve a thick yet pourable consistency.

          Taste and Adjust Sweetness:

            - Taste the mixture and adjust the sweetness by adding more honey or maple syrup if desired. Blend again to incorporate.

              Prepare the Mold:

                - Line an 8x8-inch (or similar) baking dish with parchment paper, leaving some overhang on the sides for easy removal.

                  Pour the Mixture:

                    - Pour the pineapple yogurt mixture into the lined baking dish, smoothing the top with a spatula. Tap the dish gently on the counter to remove any air bubbles.

                      Garnish (Optional):

                        - If desired, sprinkle shredded coconut on top for an extra tropical touch.

                          Freeze:

                            - Cover the dish with plastic wrap or a lid, and place it in the freezer. Freeze for at least 4-6 hours or until firm.

                              Cut into Bars:
