2 cups plain Greek yogurt

1 cup canned peaches in juice, drained and diced

1 tablespoon honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 tablespoon lemon juice

1/2 teaspoon ground cinnamon

1 cup granola (for topping)

Fresh mint leaves (for garnish, optional)

Instructions
 

Mix the Yogurt Base: In a medium bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, lemon juice, and ground cinnamon. Stir well until smooth and fully combined.

    Add Peaches: Gently fold in the diced peaches, ensuring they are evenly distributed throughout the yogurt mixture.

      Prepare the Molds: Line a muffin tin with silicone cupcake liners or paper liners for easy removal. If you don’t have cupcake liners, lightly spray the muffin tin with cooking oil.

        Fill the Molds: Spoon the yogurt-peach mixture into each muffin cup, filling them about three-quarters full. Smooth the tops with the back of the spoon.

          Add Granola Topping: Sprinkle a generous layer of granola on top of each filled cup for an added crunch.

            Freeze: Place the muffin tin in the freezer and allow the rounds to freeze for at least 4 hours, or until completely solid.

              Remove and Serve: Once frozen, carefully pop the rounds out of the muffin tin. Let them sit at room temperature for a few minutes before serving to soften slightly.
