Ingredients

2 cups rolled oats

1 cup Greek yogurt (plain or vanilla)

½ cup honey or maple syrup

½ cup raisins

¼ cup chopped walnuts or pecans (optional)

1 tsp cinnamon

1 tsp vanilla extract

A pinch of salt

Cooking spray or parchment paper for lining

Instructions

Prepare the Baking Sheet: Line a baking sheet with parchment paper or lightly spray it with cooking spray to prevent sticking.

Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, raisins, chopped walnuts (if using), cinnamon, and a pinch of salt. Stir well to combine.

Combine the Wet Ingredients: In another bowl, mix together the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth and creamy.

Combine Both Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Mix until all the oats and raisins are evenly coated with the yogurt mixture.

Form the Clusters: Using a tablespoon, scoop the mixture and form small clusters onto the prepared baking sheet. Flatten them slightly but keep them chunky for texture.

Freeze: Place the baking sheet in the freezer and freeze the clusters for at least 2 hours, or until they are firmly set.

Store or Serve: Once frozen, transfer the clusters to an airtight container. They can be stored in the freezer for up to a month. Enjoy directly from the freezer for a refreshing snack!
