Ingredients

2 cups plain Greek yogurt

2 tablespoons matcha powder

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 cup granola (store-bought or homemade)

Optional toppings: chocolate chips, shredded coconut, or berries

Instructions

In a mixing bowl, combine Greek yogurt, matcha powder, honey (or maple syrup), and vanilla extract. Use a whisk to mix until smooth and well combined. Taste the mixture and adjust the sweetness if necessary.

Prepare your popsicle molds. If you do not have molds, you can use small cups or ice cube trays with wooden sticks.

Spoon the matcha yogurt mixture into the molds, filling each mold about halfway.

Add a layer of granola on top of the yogurt in each mold, gently pressing down to ensure it sticks.

Pour more of the matcha yogurt mixture on top of the granola until you reach the top of each mold. Leave a small space at the top to allow for expansion during freezing.

Insert wooden sticks into the molds if you’re using them. If using cups, you can insert the sticks once they are partially frozen (after about 2 hours).

Freeze for at least 4 hours, or until fully solid.

To release the pops, briefly run warm water over the outside of the mold for about 10 seconds. Gently pull the pops out and enjoy!

Serve as a refreshing treat, optionally garnishing with additional granola, chocolate chips, or fresh berries.
