Frozen Yogurt Mango Kiwi Bars

2 ripe mangoes, peeled and diced

2 ripe kiwis, peeled and chopped

2 cups plain Greek yogurt (or dairy-free yogurt for a vegan option)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 tablespoon fresh lime juice

1 teaspoon vanilla extract

A pinch of salt

Optional: shredded coconut or chopped nuts for garnish

Prepare the Fruit Puree: In a blender or food processor, combine the diced mangoes, honey (or maple syrup), lime juice, and a pinch of salt. Blend until smooth. Taste and adjust sweetness if necessary.

    Mix the Yogurt Base: In a large bowl, mix the Greek yogurt with vanilla extract and a tablespoon of honey (if you like it sweeter). Stir well until the yogurt is creamy and fully combined.

      Assemble the Layers: Line a rectangular baking pan (approximately 9x5 inches) with parchment paper for easy removal. Pour half of the yogurt mixture into the prepared pan, spreading it evenly.

        Add Mango Layer: Spoon the mango puree over the yogurt layer, gently spreading it out. Use a knife or spatula to create swirls if desired for a marbled effect.

          Add Kiwi Layer: Sprinkle the chopped kiwis evenly over the mango layer. Pour the remaining yogurt mixture on top, smoothing it out gently.

            Freeze the Bars: Cover the pan with plastic wrap or aluminum foil. Place it in the freezer for at least 4-6 hours, or until fully frozen.

              Cut and Serve: Once frozen, remove the pan from the freezer. Lift the frozen mixture out of the pan using the parchment paper. Use a sharp knife to cut into bars or squares. If desired, sprinkle with shredded coconut or chopped nuts for extra texture.
