Zest of 2 lemons

1 cup graham cracker crumbs

¼ cup unsalted butter, melted

1 tablespoon sugar (optional, for sweetening the crust)

Pinch of salt

Fresh mint leaves, for garnish (optional)

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, sugar (if using), and salt. Stir until the mixture resembles wet sand. Press the crumb mixture firmly into the bottom of a mini muffin tin (about 24 molds) to form crusts. Use a firm flat object (like a shot glass) to press it down evenly.
