1 ½ cups oats

1 cup shredded unsweetened coconut

½ cup almond flour

¼ cup coconut oil, melted

¼ cup maple syrup

1 tsp vanilla extract

1 cup plain Greek yogurt (or coconut yogurt for dairy-free)

¼ cup honey or agave syrup (adjust for sweetness)

½ cup dark chocolate chips (optional)

Pinch of sea salt

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Make the Cookie Base: In a large bowl, combine oats, shredded coconut, almond flour, melted coconut oil, maple syrup, vanilla extract, and a pinch of sea salt. Mix until all the ingredients are well incorporated and resemble a crumbly dough.

      Press into Dish: Transfer the mixture into the prepared baking dish. Using your hands or a spatula, firmly press the mixture into an even layer on the bottom of the dish. Make sure to press down so it holds together when baked.

        Bake the Base: Bake in the preheated oven for 12-15 minutes, or until golden brown around the edges. Remove from the oven and let it cool in the pan for about 10 minutes.
