One of the standout features of Frozen Yogurt Blueberry Toast Cups is the vibrant burst of flavor and nutrition that fresh blueberries bring. When preparing your toast cups, consider the arrangement of the blueberries for both taste and visual appeal. To create an eye-catching presentation, you can arrange the blueberries in a circular pattern on top of the yogurt. Start by placing a ring of blueberries around the outer edge of the cup, leaving the center open for a few scattered berries. This not only looks professional but also allows for easy access to the juicy berries with each bite.

Ingredients

4 slices of whole grain bread

1 cup Greek yogurt (plain or vanilla)

1 cup fresh blueberries

2 tablespoons honey or maple syrup (optional)

1/4 teaspoon vanilla extract

1/4 teaspoon cinnamon

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Bread: Preheat your oven to 350°F (175°C). Cut each slice of bread into quarters. Using a rolling pin, flatten each piece of bread.

Shape the Cups: Lightly grease a muffin tin. Press each flattened piece of bread into the muffin cups, forming a cup shape. Bake in the preheated oven for about 12-15 minutes or until the edges are golden brown and crispy. Remove from the oven and let cool.

Make the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey or maple syrup (if using), vanilla extract, and cinnamon. Stir until smooth and well combined.

Fill the Cups: Once the bread cups are cooled, spoon the yogurt mixture evenly into each cup.

Add the Blueberries: Top each yogurt-filled cup with fresh blueberries, ensuring an even distribution.

Freeze: Place the muffin tin in the freezer for at least 2 hours, allowing the yogurt to set.

Serve: Once frozen, remove the cups from the muffin tin (you may need to run a knife around the edges for easy removal). Garnish with fresh mint leaves if desired.

Enjoy: These delicious Frozen Yogurt Blueberry Toast Cups can be enjoyed right away or stored in an airtight container in the freezer for up to a week.
