Ingredients

2 cups plain Greek yogurt

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 cup mixed berries (fresh or frozen, such as strawberries, blueberries, raspberries, and blackberries)

1/4 cup sliced almonds or chopped walnuts (optional)

2 tablespoons unsweetened shredded coconut (optional)

Instructions

Prepare Your Base: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir thoroughly until the mixture is smooth and all ingredients are well incorporated.

Line the Baking Sheet: Take a baking sheet and line it with parchment paper. This will make it easy to lift the bark out once frozen.

Spread the Yogurt: Pour the yogurt mixture onto the lined baking sheet and spread it out evenly using a spatula. Aim for a thickness of about 1/4 inch.

Add the Berries: Evenly distribute the mixed berries on top of the yogurt layer, pressing them in slightly to ensure they stick. Sprinkle the sliced almonds or chopped walnuts and shredded coconut over the top if you're using them.

Freeze the Bark: Place the baking sheet in the freezer and let it freeze for at least 4 hours, or until completely firm.

Break into Pieces: Once frozen, remove the baking sheet from the freezer. Let it sit at room temperature for a couple of minutes to soften slightly. Using your hands or a knife, break the frozen yogurt bark into pieces of your desired size.

Serve or Store: Enjoy immediately for a refreshing snack or dessert! If you wish to store leftovers, place the pieces in an airtight container separated by parchment paper and keep it in the freezer for up to 2 weeks.
