1 cup Medjool dates, pitted and chopped

1 cup raw almonds

1 1/2 cups Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon sea salt

1/4 cup unsweetened shredded coconut (optional, for topping)

Instructions
 

Prepare the Crust: In a food processor, blend the raw almonds until they are finely ground (but not turned into almond flour). Mix in the chopped dates and pulse until well combined. The mixture should stick together when pressed. If it’s too dry, add a teaspoon of water or more dates as needed.

    Form the Base: Line an 8-inch square baking dish with parchment paper, allowing some overhang for easy removal. Press the almond-date mixture evenly into the bottom of the dish, forming a firm layer. Use the back of a measuring cup to help pack it down tightly.

      Make the Yogurt Filling: In a mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, ground cinnamon, and sea salt. Stir until smooth and well combined.

        Layer the Squares: Pour the yogurt mixture over the almond-date crust, spreading it evenly with a spatula. If desired, sprinkle shredded coconut on top for added texture and flavor.

          Freeze: Cover the dish with plastic wrap and place it in the freezer. Freeze for at least 4 hours or until firm.

            Serve: Once fully frozen, remove the squares from the dish using the parchment paper overhang. Let them sit at room temperature for about 5 minutes to soften slightly before cutting into squares.

              Enjoy: Serve immediately or store any leftovers in an airtight container in the freezer for up to 2 weeks.
