Ingredients

3 cups watermelon, cubed and frozen

2 ripe kiwis, peeled and diced

1 tablespoon lime juice (freshly squeezed)

1 to 2 tablespoons honey or agave syrup (adjust for sweetness)

1 cup coconut water (or regular water)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Watermelon: If you haven’t already, cut the watermelon into cubes and spread them in a single layer on a baking sheet. Freeze for at least 3 hours or until solid.

Blend the Ingredients: In a blender, combine the frozen watermelon cubes, diced kiwis, lime juice, honey (or agave syrup), and coconut water.

Blend until Smooth: Start blending on low speed until the mixture breaks down, then increase to high speed. Blend until smooth and creamy. If the mixture is too thick, add a bit more coconut water until you reach your desired consistency.

Taste and Adjust Sweetness: Taste the slushy and adjust the sweetness if necessary. You can add more honey or agave syrup if desired.

Serve it Up: Pour the slushies into chilled glasses. If using, garnish with fresh mint leaves for a pop of color and added freshness.

Enjoy Immediately: For the best texture, serve the slushies right away while they’re still icy and refreshing.
