2 cups fresh strawberries, hulled and sliced

1/2 cup granulated sugar, divided

1 tablespoon lemon juice

Zest of 1 lemon

1 cup heavy cream

1 teaspoon vanilla extract

1/4 cup Greek yogurt (optional for added creaminess)

A pinch of salt

Prep the Strawberries: In a medium bowl, combine the sliced strawberries with 1/4 cup of granulated sugar and the lemon juice. Gently toss to coat the strawberries and allow them to macerate for about 15-20 minutes until they release their juices.

    Make the Strawberry Puree: Once the strawberries have softened, transfer them to a blender or food processor. Add the lemon zest and blend until smooth. Taste the puree; if desired, add more sugar to taste, then blend again to combine. Set aside.

      Whip the Cream: In a separate bowl, pour in the heavy cream. Using an electric mixer or a whisk, whip the cream on medium speed until soft peaks form. Gradually add the remaining 1/4 cup of sugar, vanilla extract, and a pinch of salt. Continue whipping until medium peaks form (the cream should hold its shape but still be smooth).

        Fold in the Yogurt: If using, gently fold in the Greek yogurt into the whipped cream mixture until well incorporated. This will add an extra creaminess to your drops.

          Combine and Layer: Take 1/2 of the strawberry puree and gently fold it into the whipped cream mixture, creating a pink marbled effect. Fill silicone molds or ice cube trays halfway with the strawberry mixture. Then, spoon in the remaining strawberry puree on top.
