Ingredients

2 cups rolled oats

1 cup frozen strawberries, thawed and chopped

1/4 cup chia seeds

1/2 cup almond milk (or milk of choice)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

Optional: 1/4 cup chopped nuts or dark chocolate chips for extra crunch

Instructions

Prepare the Mixture: In a large mixing bowl, combine the rolled oats, chia seeds, cinnamon, and salt.

Mix the Wet Ingredients: In a separate bowl, mix together the almond milk, honey (or maple syrup), and vanilla extract until well combined.

Combine Everything: Slowly pour the wet mixture into the dry ingredients and stir until the oats are fully coated. Fold in the chopped strawberries (and nuts or chocolate chips if using).

Shape the Coins: Using a tablespoon or a cookie scoop, form the mixture into small, flat coins (about 2 inches in diameter) and place them on a lined baking sheet.

Freeze Them: Once shaped, place the baking sheet in the freezer for about 1-2 hours, or until the coins are fully hardened.

Store for Enjoyment: Transfer the frozen oat coins to a zip-top bag or airtight container and store in the freezer. They can be enjoyed straight from the freezer for a quick snack or breakfast!
