1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

Pinch of salt

For the Filling:

2 cups plain Greek yogurt

1 cup fresh raspberries (plus extra for garnish)

½ cup honey (or maple syrup, for a vegan option)

1 teaspoon vanilla extract

Juice of 1 lemon

For Garnish:

Fresh mint leaves

Additional fresh raspberries

Instructions
 

Prepare the Crust:

    - In a medium bowl, mix the graham cracker crumbs, melted butter, sugar, and salt until well combined.

      - Press the mixture firmly into the bottom of a 9-inch tart pan, ensuring an even layer.

        - Place the crust in the freezer for about 15 minutes to set.

          Make the Filling:

            - In a blender or food processor, combine the Greek yogurt, fresh raspberries, honey, vanilla extract, and lemon juice.

              - Blend until smooth and creamy. You can pulse a few times to leave some raspberry chunks for texture, if desired.

                Assemble the Tarts:

                  - Remove the crust from the freezer and pour the raspberry yogurt mixture over it. Spread it evenly with a spatula.

                    - Tap the tart pan gently on the counter to remove any air bubbles.

                      Freeze the Tarts:

                        - Cover the tart with plastic wrap and place it in the freezer for at least 4 hours, or until firm.

                          Serve:

                            - Once the tarts are frozen, remove them from the tart pan by gently pressing the bottom.

                              - Slice into wedges or individual slices and garnish with fresh raspberries and mint leaves.
