2 cups fresh pineapple, diced

1 can (13.5 oz) coconut milk (full-fat for creaminess)

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1/2 cup shredded coconut (unsweetened)

1/4 teaspoon salt

Fresh mint leaves for garnish (optional)

Instructions
 

Start by preparing the pineapple. If using fresh pineapple, peel, core, and dice it into small chunks. Reserve a handful of the diced pineapple for garnish if desired.

    In a blender, combine the diced pineapple, coconut milk, honey or maple syrup, vanilla extract, and salt. Blend on high until smooth and creamy, ensuring no pineapple chunks remain.

      Stir in the shredded coconut by hand, mixing thoroughly to distribute it evenly throughout the mixture.

        Take small paper or silicone cups and pour the mixture evenly into each cup. Make sure to leave a little space at the top for expansion during freezing.

          If you reserved a handful of diced pineapple, place a few pieces on top of each cup for an added tropical touch.

            Cover each cup with plastic wrap or a small lid, then carefully transfer them to the freezer. Freeze for at least 4 hours, or until completely solid.

              When ready to serve, remove the cups from the freezer and let them sit at room temperature for about 5 minutes to soften slightly. This will make it easier to enjoy the cups.
