Frozen yogurt sandwich bars are a delightful dessert that marries the creaminess of yogurt with the fun of a sandwich format. Unlike traditional ice cream sandwiches, which often rely on heavy cream and sugar, frozen yogurt sandwich bars leverage the tangy flavor of yogurt, resulting in a lighter and slightly tart profile. Ingredients

2 cups plain Greek yogurt

1/2 cup brewed espresso, cooled

1/3 cup maple syrup

1 teaspoon vanilla extract

1/4 cup unsweetened cocoa powder

1 teaspoon instant coffee granules (optional, for a stronger flavor)

1 cup granola or crushed cookie crumbles

1/2 cup mini chocolate chips

1/4 cup chopped nuts (e.g., almonds or walnuts)

1/4 cup shredded coconut (optional)

1 tablespoon chocolate syrup (for drizzling)

Instructions

Prepare the Yogurt Base: In a medium mixing bowl, combine the plain Greek yogurt, cooled espresso, maple syrup, vanilla extract, cocoa powder, and instant coffee granules (if using). Whisk until the mixture is smooth and well-combined. Taste and adjust sweetness if necessary by adding more maple syrup.

Layer the Mixture: Line a 9x9-inch baking dish with parchment paper, allowing some overhang for easy removal later. Pour half of the yogurt mixture into the prepared dish, smoothing it out with a spatula.

Add Crunch & Flavor: Sprinkle evenly with granola or crushed cookie crumbles, mini chocolate chips, chopped nuts, and shredded coconut. Drizzle a bit of chocolate syrup over this layer for added sweetness and decoration.

Top It Off: Pour the remaining yogurt mixture over the top, spreading it out gently to cover the crunchy layer. Use the spatula to smooth it evenly.

Freeze: Cover the dish with plastic wrap and place it in the freezer for at least 4 hours, or until the yogurt is firm.

Slice and Serve: Once fully frozen, remove the dish from the freezer and use the parchment overhang to lift out the yogurt sandwich. Place it on a cutting board and slice into bars or squares, depending on your preference.

Drizzle and Enjoy: For an extra touch, drizzle some chocolate syrup over each bar before serving.

Store: Keep any leftover bars in an airtight container in the freezer for up to 2 weeks.
