Frozen Mocha Protein Pudding Pops

Ingredients
  

2 cups unsweetened almond milk (or any milk of choice)

1/2 cup strong brewed coffee, cooled

1/4 cup cocoa powder

1/4 cup chocolate protein powder (whey or plant-based)

1/4 cup maple syrup or honey (adjust for desired sweetness)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

Optional toppings: chocolate chips, crushed nuts, or whipped cream

Instructions
 

Combine Ingredients: In a large mixing bowl, whisk together the almond milk, cooled brewed coffee, cocoa powder, chocolate protein powder, maple syrup (or honey), vanilla extract, and sea salt. Make sure there are no lumps, and the mixture is smooth.

    Taste Adjustments: Taste the mixture and adjust sweetness if necessary by adding more maple syrup or honey to your preference.

      Prepare Molds: Pour the mixture into popsicle molds, leaving a little space at the top to allow for expansion during freezing.

        Insert Sticks: If your pop molds come with sticks, insert them as instructed. If not, let the molds freeze for about 1.5 hours before inserting sticks halfway through.

          Freeze: Place the molds in the freezer and freeze for at least 4–6 hours, or until fully set.

            Unmold and Serve: To remove the pudding pops, run warm water over the outside of the molds for a few seconds to loosen. Carefully pull out the pops and, if desired, top with chocolate chips, crushed nuts, or a dollop of whipped cream before serving.

              Store Leftovers: If you have any leftover pops, place them in a Ziploc bag or an airtight container and store them in the freezer.
